Spinach Frittata with Bacon and Cheddar
We tend to cook seasonally, and we are always happy when spinach is in season. The combination of spinach and bacon is so good. Be sure to use an oven safe skillet. I tend to use the broiler to finish cooking the eggs, but you can also place the skillet into a 450 deg oven for 10-15 min.
Spinach Frittata Recipe
8 slices of cooked bacon, roughly chopped into ¼ inch pieces
½ lb of fresh spinach – rinsed, dried and torn into roughly 1 inch pieces
In 2 tbsp of bacon fat:
Saute ½ large onion, peeled and diced, 2-3 minutes until slightly translucent.
Off the heat, add the spinach pieces until the leaves are wilted.
½ cup milk
Salt to taste
Add egg mixture to skillet, along with the spinach and bacon. Stir to distribute and cook a few minutes until the eggs begin to set.
Add and sprinkle:
1 cup grated cheddar cheese evenly over the top
Transfer the skillet to the oven, either bake for 10-15 min or place under the broiler for a few minutes. Allow the frittata to set a few minutes before cutting. Enjoy.
