Quinoa Breakfast Skillet
This recipe came from the web site “How Sweet Eats”. It can easily be made vegetarian by leaving out the bacon. The vegetables make it very tasty and satisfying.
Quinoa Breakfast Skillet Recipe
In a large skillet over medium heat, cook bacon till crisp:
4 slices bacon, chopped
Remove bacon from skillet to drain on paper towel. Reduce heat and add the vegetables, cover and cook 5-6 minutes:
1 small sweet potato, chopped
½ red onion, chopped
½ red pepper, chopped
½ green pepper, chopped
1 cup sliced mushrooms, chopped
2 cloves garlic, minced
Add quinoa and allow it to toast for 1-2 minutes.
½ cup uncooked quinoa
Add the stock, reduce heat to a simmer for 15 minutes.
1 cup low sodium vegetable, chicken broth or water
4 eggs, cooked to your desire
Salt and pepper to taste
