Orange Glazed Blueberry Scones
This has become our favorite blueberry scone. I usually freeze blueberries when they are in season and use them throughout the year. I have also bought large bags of frozen blueberries. The store bought blueberries tend to bleed a little. That is not a problem, but I do prefer the scones not to be purple. Nevertheless, they taste great.
Orange Glazed Blueberry Scone Recipe
Preheat oven to 400 deg.
In a large bowl, sift together:
2 cups unbleached flour
1 tbsp baking powder
1 tsp salt
1/3 cup sugar
Cut into the flour using 2 forks, a pastry blender or a food processor:
¼ cup butter, chilled and cut into chunks
Mix together and add to the flour mixture:
¾ cup buttermilk or cream
In a little flour, add the berries and fold into batter being careful not to bruise berries:
2 cups fresh blueberries
You may drop a spoon full on an ungreased cookie sheet or add additional flour, pat down and cut into various triangle shapes.
Bake for 15-20 min. Cool before applying orange glaze.
Make a glaze frosting by combining:
2 tbsp unsalted butter
2 cups powdered sugar
1 tbsp orange zest
Orange juice to make a frosting/glaze consistency
Drizzle the glaze over the scones. Enjoy!
