Hash Brown Egg Pie

This is perfect recipe for a group.   I usually cut the “pie” into quarters and have a 2nd or 3rd pie for second helpings.   You can prepare the potato and ham/cheddar mixture the day before and refrigerate.   Let the pie come to room temp (about 30 min), add the eggs/milk and bake.

Hash Brown Egg Pie Recipe

Start with:
3 cups of shredded potatoes
Press potatoes into bottom and up the sides of an ungreased 9 inch pie pan.

Drizzle with:
1/3 cup butter, melted

Bake at 425 deg for 25 min or until lightly browned;   cool on a wire rack for 10 min.

Combine and spoon into potato shell:
1 cup chopped ham
1 cup shredded cheddar cheese
¼ cup finely chopped green peppers

Stir well and pour over cheese:
6 eggs
½ cup milk
½ tsp salt
¼ tsp pepper

Bake at 350 deg for 25-30 minutes until set.   Let sit a few minutes before cutting.
