Hash Brown Breakfast Cups
This recipe came from The Joy of Baking. I found this recipe on YouTube where they demonstrate how it’s made. They are very good and nicely filling.
Hash Brown Breakfast Cup Recipe
Preheat oven to 475 deg. Brush with melted butter 6 large muffin cups.
1 lb of frozen hash browns, thawed
2 tbsp melted butter
2 egg whites, beaten
½ tsp salt
½ tsp pepper
Evenly divide the potato mixture among the muffin cups, pressing mixture down and around the sides. (about ½ cup mixture in each cup). Bake 15 min.
Olive oil or butter
¼ red pepper
1 cup chopped ham, bacon or sausage
Salt and pepper
Add: 2 cups spinach, mushrooms, zucchini, tomatoes, etc., divided between the cups.
Top with 1½ cup any cheese (cheddar, swiss, Colby, Monterey Jack, etc.)
Place in oven for 2-3 minutes to melt cheese.
Remove from oven and crack 1 egg in each cup.
Bake 8-12 minutes until whites are set.
