Fresh Apple and Cinnamon Scones

Fresh Apple and Cinnamon Scone Recipe
2 ¾ cups all-purpose flour
1/3 cup granulated sugar
¾ teaspoon salt
1 tablespoon baking powder
1 teaspoon apple pie spice or ground cinnamon
½ cup (8 tablespoons) cold butter
¾ cup fresh apple, chopped into ½ inch pieces (about half a medium apple)
¾ cup cinnamon chips
2 large eggs
1 teaspoon vanilla extract
½ cup applesauce, unsweetened preferred
3 tablespoons sugar
½ teaspoon ground cinnamon
Whisk flour, sugar, salt, baking powder and spice together in a large mixing bowl. Work in butter, using a fork, pastry cutter or blender, leaving large chunks of butter. (This butter melts in the oven, leaving the scones light and fluffy.) Stir in chopped apple and cinnamon chips.
Whisk eggs, vanilla and applesauce together in another mixing bowl. Add liquid ingredients to dry ingredients and stir until all is moistened and holds together.
Gently pat dough till about ¾ inch thick and cut to desired shape. Brush with milk and sprinkle on mixture of sugar and cinnamon.
Line a baking sheet with parchment, Silpat or greased pan. For best texture and highest rise, place pan of scones in freezer for 30 minutes, uncovered. Preheat oven to 375 degrees.
Bake for 18-22 minutes.
