Egg and Wilted Spinach Salad
When I first saw this recipe on the Better Homes and Gardens website, I questioned how it would taste. It was a wonderful surprise realizing how good it is and how good it is for you.
Egg and Wilted Spinach Salad Recipe
In a large bowl, place spinach and set aside.
1 15-oz bag of baby Spinach
Cook the apples with the olive oil for 3-4 minutes or until tender.
1 tbsp olive oil
2 Me dium Granny Smith Apples, cored and sliced
Stir in vinegar and honey and bring to boil.
2 tbsp balsamic vinegar
1 tbsp honey
Add to spinach in bowl until combined and slightly wilted.
Cook eggs in skillet with 4-8 eggs and 1 tbsp olive oil. Sprinkle with blue cheese and salt & pepper, and cook till whites are set.
4 ounces of blue cheese
Salt and pepper
Place 2 eggs on each serving on top of the spinach.
