Breakfast Skillet with Potatoes and Canadian Bacon
I found this recipe on the “Barefoot in the Kitchen” website. It is quick and easy to make using one skillet. And it can be adapted to meet the family’s preferences. We especially like the crunch of the potatoes.
Breakfast Skillet Recipe
Heat olive oil in skillet. Cook until browned and crispy. Season with salt and pepper. Remove to a bowl and set aside.
1 tbsp oil
2 cups southern style hash brown or frozen diced potatoes
Salt and Pepper
Cook onions and red peppers in skillet. Add to bowl with potatoes.
2 tbsp diced red pepper
½ cup yellow onion, diced small
Cut the Canadian Bacon into ¾ inch pieces and warm in pan. Add to potatoes, onion and pepper.
8 thin slices of Canadian bacon
Toss everything together. Salsa can be added to egg mixture or on the side.
