Breakfast Quesadilla

These quesadillas are so good, and allow for the possibility of using a variety of ingredients stuffed into the flour tortillas.   By putting the ingredients into each quadrant, it is possible to fold the tortillas in half and then into quarters, making a nice package easily toasted in a fry pan.   As an additional bonus, you can make additional quesadillas and individually freeze them before toasting.

Breakfast Quesadilla Recipe

Ingredients:   Any combination of the following:
Flour tortilla
Scrambled eggs
Bacon or sausage
Salsa
Sharp cheddar cheese or pepper jack cheese
Avocado or guacamole
Diced green chiles or chipotle peppers
Spinach or arugula
Chives
Pinto or black beans
Hash brown potatoes

Lay the tortillas flat on the counter, and make a slice from the center out to the edge.   This makes it easier to fold into quarters.   Place ingredients into each quadrant.   Fold in half and once again, making a triangle.   Place the now triangular tortillas in a greased fry pan and cook until golden brown, about 4-5 minutes on each side.

Serve with additional salsa and sour cream.
