This recipe came from “Sally’s Baking Addiction” website. There are a number of Baked Apples on the web, but I find this to be the best. It can be served at Breakfast or as an easy dessert.
Baked Apple Recipe
Beat or mash the stuffing for the apples.
3 tbsp unsalted room temp butter
¼ cup brown sugar
½ tsp cinnamon
1/8 tsp nutmeg
¼ cup oatmeal
Optional: 2 tbsp raisins, dried cranberries or chopped nuts.
Apple cider replacing the water
4 large apples, cored (using a pairing knife, cut around the core 1/2 – 3/4 down into the apple). Carefully dig into the core, removing all the seeds. Place the cored apples in a baking dish. Spoon filling into each apple. Pour warm water (or apple cider) into the pan around the apples, preventing the apples from drying out.
Bake at 375 deg for 40-45 minutes until apples are slightly soft and a little longer for softer apples.
Baste the apples with the juices from the pan.
Serve with caramel, whipped cream or ice cream.
