Baked Apple Cinnamon Oatmeal Cups

This recipe came from Sally’s Baking Addiction.   These oatmeal cups are so addicting.   It is recommended that you use the whole oats rather than quick oats or steel cup oats, and that you immediately bake the ingredients after combining the liquid with the dry ingredients   (The oatmeal will absorb all the liquid).

Baked Apple Cinnamon Oatmeal Cups

Preheat oven to 350 deg.   Spray a muffin pan with nonstick spray.

Combine the following ingredients:
  1½ cups dairy or non-dairy milk
  2 large eggs
  ½ cup pure maple syrup
  ½ cup unsweetened applesauce
  ½ tsp vanilla extract
  3 cups old fashion oats
  1 tsp baking powder
  1 ½ tsp cinnamon
  ¼ tsp nutmeg
  ¼ tsp salt

Into the ingredients, fold in:
  1 heaping cup peeled chopped apple
  ½ cup chopped walnuts or pecans (optional)

Bake for 25-30 minutes or until the edges are lightly brown.

Cool for 5 minutes before serving.   Serve with a side of yogurt.
