These waffles do not take long to make and can be done right before a meal. Preheat a lightly sprayed or brushed waffle griddle.
Beat and set aside:
2 egg whites beaten until stiff
In a separate bowl
beat:
2 egg yolks until thick
Add to egg yolks
1 ½ cups milk
½ cup vegetable oil
Combine:
1 ¾ cups flour
1 tbsp baking powder
1 tbsp sugar
1 tsp salt
Fold the flour mixture into the egg yolk mixture and beat until smooth. Fold into the beaten egg whites. Pour onto waffle iron and bake until golden brown. Keep the waffles warm in a 200 deg oven until ready to serve. Sprinkle with confectioner sugar. (Waffles can be reheated in a toaster.)
